Baillage of Uganda, End-of-year Gala Dinner

The Baillage of Uganda held their End-of-year Gala Dinner at the Kampala Serena Hotel’s Pearl of Africa Restaurant.

The evening began with a bubbly cocktail on the terrace (Hill&Dale Sparkling Brut MCC).

Guests then proceeded to the Pearl of Africa Restaurant - the fine dining restaurant of the Kampala Serena Hotel - for a sumptious dinner. Chaine Member, Chef Eshton Muthai and his team prepared a fantastic meal. The meal started with a Sous Vide Chicken Mousseline. This was followed by an amazing soup: Hearty mush of “tooke” (green banana), Camembert, onion and leek. Both courses were served with a Rondebosch Chenin Blanc 2019. The next course was a Thai Maritime Harvest of squid, lobster and prawn, mildly spiced with ba mee noodles in chilly basil flavouring, paired with a Pinot Grigio 2020.

An Intermezzo comprising of limoncello sorbet, bracing mish mash of lemony essence, and fruit mosaic caviar with a peppery kick was served before a short recess.

The main meal was not to be outdone - Charred hand selected Molo Lamb delice: A succulent short rib loin steak with burned thyme and sea salt, cooked to perfect doneness with all spices, crust, creamed potato fries, braised morilles, Macallan mint jus. The accompanying wine for the main course was a B&B Pinot Noir Reserve.

Dessert was a ‘Peterson Charm’ designed by Chef Peterson – An Amarula and blueberry parfait in almond sable with a complement of chocolate. This was paired with a Ruby Port. Freshly brewed Uganda tea, coffee and herbal infusions followed, served with homemade chocolates and assorted cheese boards.

Outgoing Bailli Délégué of Chaîne des Rôtisseurs Uganda thanked the team at Kampala Serena Hotel for a truly magnificent evening and guests for attending.

As I step down as Bailli Délégué, Chaîne des Rôtisseurs Uganda, I wish to thank my Board, my Members and Friends of Chaîne for the support they have given to our association and myself.
