Baillage of Uganda, Chapitre

The Baillage of Uganda held their Chapitre at the Kampala Serena Hotel.
The evening began with a bubbly cocktail on the poolside. The Guest of Honour was Norbert Simon, Officier Commandeur, Bailli Délégué of Austria and Member of the Chaine International Board in Paris, who attended along with his son Maximilian Simon, Officier of the Baillage of Austria.
Mr. Simon fomally inducted Bailli Délégué Mohit Advani along with Chaîne des Rôtisseurs Uganda Board Members, Professional Members and Non-Professional Members.
After the induction ceremony, members and guests proceeded to the Pearl of Africa Restaurant - the fine dining restaurant of the Kampala Serena Hotel - for a sumptious dinner. Chaine Member, Chef Eshton Muthai and his team prepared a wonderful dinner. The meal started with a Foie Gras Parfait, followed by a Velvety Velouté of Morel, Porcini and Shimeji Mushrooms flavoured with grated truffles, both served with a Zonin Pinot Grigio Delle Venezie 2020. After that came a Crustacean and Mollusks Harvest Umami on a bed of noodles, served with a B&G Chablis Aoc St Louis 2019. A Lime & Pepper Sherbet with petit meringue, freeze dried berries and citrus jus was served before the main meal. The beautifully presented main meal comprised of Prime Char-Grilled Wagyu Steak flavoured with smoked sea salt and green peppercorns, served with a rainbow mash of root vegetables and assorted greens. The wine pairing for the main meal was a Dos Almos Gran Reserva Red Blend 2017. The grand finale was an Orchestra Sweet Temptation: A dome of dark chocolate, chamomile and amarula mousse on crunchy strussel, served with The Winemansters Noble Late Harvest 2018 dessert wine.
Bailli Délégué Mohit Advani and his Board Members Marinka Sanc-George, Kainembabazi Sabiti, Daniel Kang'u and James Rattos thanked the Guest of Honour Norbert Simon for attending and presiding over the Chapitre. The fantastic team at the Kampala Serena Hotel was also thanked for a wonderful evening. The Chefs, Sous Chefs and Service Brigade were awarded with certificates from Chaîne des Rôtisseurs Uganda.
